Start from

About Tarragon (Mexican/Winter)
Always buy French Tarragon for cooking; it has the true, delicate anise/licorice flavour. Russian tarragon grows from seed, looks identical, but is largely flavourless.
Climate requirements
Highly resilient to hot and humid Indian summers, unlike French Tarragon. It is sensitive to waterlogging during heavy monsoon rains and requires partial shade during extreme peak summer afternoons in zones like Central and Northern India.
