What kitchen waste should I not put in compost?

Avoid meat, fish, dairy, oily or spicy cooked food, and leftover rice in open compost — they attract rats and flies, especially in Indian summers. Tea bags with staples, treated wood, and diseased plant matter should also stay out of your compost bin.
